Spaghetti Squash

I love spaghetti squash. Not only is it delicious, but it's also packed fulla good nutrients and is easy to cook.

We start by poking fork holes in it then popping it in the microwave for about 10 minutes. By the time it comes out and cools, the amount of prep time remaining is pretty minimal.

If you follow this advice, however, be SURE you put enough fork holes into the squash before starting the microwave, otherwise it might explode, causing the door to fly open and scare the crap out of your kid. Oh yeah, and you'll end up with something like this to clean up:
